No jo, te\u010f mus\u00ed b\u00fdt v\u0161echno \u201efree\u201c, \u201ecool\u201c, \u201ein\u201c a \u201emultikulti\u201c, tak\u017ee ml\u00ed\u010d\u0148\u00e1k u\u017e sem nepat\u0159\u00ed. Brzy nebudu u\u017e moci vyj\u00edt na ulici, abych se z tohoto sv\u011bta nepoblil.<\/em><\/p>\n<p>Pan <a href=\"http:\/\/www.vagus.cz\/?p=3865\" target=\"_blank\">Bogs<\/a> je roz\u010d\u00edlen\u00fd a smutn\u00fd. Pr\u00e1vem. P\u0159ed p\u00e1r dny toti\u017e <a href=\"http:\/\/www.blesk.cz\/clanek\/regiony-praha-praha-zpravy\/403991\/dejvice-placou-legendarni-mlicnak-zavrel-lahudky-nahradi-vinoteka-s-pekarnou.html\" target=\"_blank\">zav\u0159eli kultovn\u00ed Ml\u00e9\u010dn\u00fd bar<\/a> na dejvick\u00e9m kula\u0165\u00e1ku. Podle slov pan\u00ed prodava\u010dky ho nahrad\u00ed jin\u00e1 ob\u010derstvovna: <em>\u201eN\u011bco modern\u011bj\u0161\u00edho a dra\u017e\u0161\u00edho,\u201c<\/em> dod\u00e1v\u00e1 s povzdychem. Podle jedn\u011bch p\u016fjde o bageterii, podle jin\u00fdch o v\u00edcepatrovou restauraci (a v tom p\u0159\u00edpad\u011b z\u0159ejm\u011b vezme za sv\u00e9 kazetov\u00fd strop). Hladov\u00fdm pocestn\u00fdm tak v nejbli\u017e\u0161\u00edm okol\u00ed zb\u00fdv\u00e1 t\u0159eba KFC, \u0159et\u011bzcov\u00e1 bageterie nebo peka\u0159stv\u00ed Paul (\u010dti kousek rozmra\u017een\u00e9ho pe\u010diva za 50 korun). Pohostinstv\u00ed vznikaj\u00ed a zase miz\u00ed. Zav\u0159en\u00ed takov\u00e9ho podniku, jak\u00fdm b\u00fdval n\u00e1\u0161 obl\u00edben\u00fd ml\u00ed\u010d\u0148\u00e1k, je ov\u0161em i jedn\u00edm z mnoha p\u0159\u00edznak\u016f toho, jak se z Prahy v jist\u00e9m ohledu st\u00e1v\u00e1 steriln\u00ed, nudn\u00e9 a p\u0159edra\u017een\u00e9 m\u011bsto.<\/p>\n<p><!--more-->V Praze jist\u011b doch\u00e1z\u00ed k mnoha aktivit\u00e1m (l\u00e9pe \u010di h\u016f\u0159e) o\u017eivuj\u00edc\u00edm ve\u0159ejn\u00fd prostor, skute\u010dn\u011b \u017eiveln\u00e1 a autonomn\u00ed \u010dinnost je ale st\u00e1le sp\u00ed\u0161e trnem v oku. Gentrifikace postupuje a povolen\u00e9 pouli\u010dn\u00ed aktivity b\u00fdvaj\u00ed \u201evy\u010di\u0161t\u011bn\u00e9\u201c, uhlazen\u00e9, posv\u011bcen\u00e9 shora \u010di p\u0159\u00edmo shora organizovan\u00e9 (proto\u017ee i mocn\u00ed pochopili, \u017ee jim z tohoto m\u016f\u017ee k\u00e1pnout dobr\u00fd byznys nebo aspo\u0148 PR). Stejn\u00e9 je to i s obchody a provozovnami \u2013 z metropole m\u00e1 zmizet nap\u0159\u00edklad obl\u00edben\u00e1 Bar\u00e1\u010dnick\u00e1 rychta nebo nem\u00e9n\u011b popul\u00e1rn\u00ed <a href=\"http:\/\/e-petice.cz\/petitions\/petice-za-zachovani-knihkupectvi-fiser.html\" target=\"_blank\">knihkupectv\u00ed Fi\u0161er<\/a>. Podniky pro v\u0161echny jsou pomalu a jist\u011b nahrazov\u00e1ny podniky jen pro n\u011bkoho \u2013 hotely, drah\u00fdmi turistick\u00fdmi restauracemi a bary nebo obchody se suven\u00fdry. Tyto \u201eslu\u017eby\u201c v\u011bt\u0161inou nep\u0159in\u00e1\u0161ej\u00ed \u017e\u00e1dnou velkou hodnotu, nav\u00edc jich v Praze najdeme nepo\u010d\u00edtan\u011b. A podobn\u00e9 trendy se u\u017e bohu\u017eel d\u00e1vno net\u00fdkaj\u00ed jen centra.<\/p>\n<p>Podobn\u011b se to m\u00e1 i s dejvick\u00fdm ml\u00ed\u010d\u0148\u00e1kem. Z Prahy se st\u00e1v\u00e1 gurm\u00e1nsk\u00e1 metropole \u2013 na sv\u00e9 si p\u0159ijdou milovn\u00edci in \u0159ezn\u00edk\u016f i vegani, na ka\u017ed\u00e9m kroku je n\u011bco raw a zastoupen\u00ed tu maj\u00ed mo\u017en\u00e1 v\u0161echny kuchyn\u011b sv\u011bta. Na prvn\u00ed pohled to vypad\u00e1 jako \u017e\u00e1dan\u00e1 pestrost, kdy\u017e se ale pod\u00edv\u00e1me d\u016fkladn\u011bji a kriti\u010dt\u011bji, vid\u00edme, \u017ee nem\u00e1lo z t\u011bchto podnik\u016f originalitou zrovna neopl\u00fdv\u00e1 a navz\u00e1jem se podobaj\u00ed (n\u011bkter\u00e9 nab\u00eddkou, mnoh\u00e9 vzhledem \u2013 nebo v\u00e1m v\u0161echny ty kav\u00e1rny a lok\u00e1loidn\u00ed hospody nespl\u00fdvaj\u00ed?). P\u0159edev\u0161\u00edm ale naprost\u00e1 v\u011bt\u0161ina z nich c\u00edl\u00ed jen na ur\u010ditou, \u00fazkou (a st\u00e1le stejnou) skupinu lid\u00ed. Mluv\u00edm o oby\u010dejn\u00fdch hospod\u00e1ch, j\u00eddeln\u00e1ch, ml\u00e9\u010dn\u00fdch barech a lah\u016fdk\u00e1\u0159stv\u00edch, pek\u00e1rn\u00e1ch a cukr\u00e1rn\u00e1ch s klasick\u00fdmi \u010desk\u00fdmi z\u00e1kusky\u2026 Je taky absurdn\u00ed, \u017ee zat\u00edmco v cizin\u011b spousta lid\u00ed pase po \u010demkoliv lok\u00e1ln\u00edm a je schopn\u00e1 j\u00edst v t\u011bch nejzaplivan\u011bj\u0161\u00edch podnic\u00edch nebo na ulici (jen aby to bylo autentick\u00e9!), v Praze nevstoup\u00ed nikam, co nen\u00ed r\u00e1doby nadesignovan\u00e9 a nem\u00e1 pe\u010de\u0165 r\u00e1doby gurm\u00e1nstv\u00ed, kde\u017eto nad oby\u010dejn\u00fdmi lah\u016fdkami s chleb\u00ed\u010dky a sal\u00e1ty ohrne nos. Co\u017e je o to vtipn\u011bj\u0161\u00ed, vezmeme-li v \u00favahu, jak moc z\u00e1rove\u0148 dnes jede trend v\u0161eho lok\u00e1ln\u00edho. <\/p>\n<p>Ano, n\u011bkter\u00e1 lah\u016fdk\u00e1\u0159stv\u00ed a cukr\u00e1rny zrovna neosl\u0148uj\u00ed kvalitou, to v\u0161ak nen\u00ed probl\u00e9m sortimentu samotn\u00e9ho, ale pravd\u011bpodobn\u011b to ukazuje na ni\u017e\u0161\u00ed \u00farove\u0148 surovin a\/nebo slu\u017eeb, co\u017e nen\u00ed nic, co by se nedalo zm\u011bnit. A nab\u00eddkou nem\u016f\u017ee klasick\u00e9mu lah\u016fdk\u00e1\u0159stv\u00ed konkurovat \u017e\u00e1dn\u00e9 modern\u00ed bistro. Nikdo m\u011b nep\u0159esv\u011bd\u010d\u00ed, \u017ee existuje sendvi\u010d lep\u0161\u00ed poctiv\u00e9ho chleb\u00ed\u010dku, nebo jak ned\u00e1vno poznamenala kamar\u00e1dka (a milovnice dobr\u00e9ho j\u00eddla): <em>\u201eNevid\u00edm prostor pro kapkejky ve sv\u011bt\u011b, kde existujou rakvi\u010dky se \u0161leha\u010dkou, v\u011btrn\u00edky a v\u011bne\u010dky&#8230;\u201c<\/em> J\u00e1 osobn\u011b si u\u017e ani nepamatuju p\u0159\u00edpad, kdy bych v lah\u016fdk\u00e1ch utrp\u011bla n\u011bjakou chu\u0165ovou \u010di zdravotn\u00ed \u00fajmu, \u010d\u00edm\u017e \u010dasto argumentuj\u00ed gurmet fa\u0161isti. Ano, mnoh\u00e9 podniku tohoto typu mohou p\u016fsobit za\u0161le, ale copak to m\u00e1 samo o sob\u011b vliv na kvalitu v\u00fdrobk\u016f?<\/p>\n<p>A tady se mo\u017en\u00e1 dost\u00e1v\u00e1me k j\u00e1dru pudla: za mizen\u00edm na\u0161ich obl\u00edben\u00fdch v\u00fdva\u0159oven je z velk\u00e9 \u010d\u00e1sti prachoby\u010dejn\u00e9 snobstv\u00ed a bur\u017eoustv\u00ed (a to nejen konzument\u016f, ale i majitel\u016f nemovitost\u00ed, kte\u0159\u00ed ve sv\u00fdch domech \u201esamoz\u0159ejm\u011b\u201c rad\u0161i vid\u00ed luxusn\u00ed restauraci ne\u017e bufet)! Nechu\u0165 j\u00edt si sednout n\u011bkam, kde to nevypad\u00e1 podle posledn\u00edch trend\u016f, ale naopak posledn\u00edch 30, mo\u017en\u00e1 50 let stejn\u011b, kde to nen\u00ed v\u017edy prvopl\u00e1nov\u011b p\u011bkn\u00e9 (i kdy\u017e mnoh\u00e9 z provozoven pod za\u0161lost\u00ed skr\u00fdvaj\u00ed kvalitn\u011bj\u0161\u00ed a zaj\u00edmav\u011bj\u0161\u00ed interi\u00e9ry ne\u017e v\u011bt\u0161ina dne\u0161n\u00edch in bister a bar\u016f, zmi\u0148ovan\u00fd ml\u00ed\u010d\u0148\u00e1k nevyj\u00edmaje), na m\u00edsta, jejich\u017e n\u00e1v\u0161t\u011bvou se obvykle nechlub\u00ed na soci\u00e1ln\u00edch s\u00edt\u00edch. A p\u0159edev\u0161\u00edm na m\u00edsta, kde m\u016f\u017eete potkat kohokoliv \u2013 tedy i ty, kter\u00e9 ve vy\u0148u\u0148an\u00fdch vinohradsk\u00fdch kav\u00e1rni\u010dk\u00e1ch a raw bistrech nepotk\u00e1te. Lidi hodn\u011b star\u00e9, nehezk\u00e9, tlust\u00e9, se \u0161patn\u00fdm vkusem, lidi chud\u00e9, co si v\u00edc ne\u017e chleb\u00ed\u010dek nebo z\u00e1kusek za 25 korun prost\u011b dovolit nem\u016f\u017eou. Mnoho z nich do t\u011bch nov\u00fdch a modern\u00edch podnik\u016f nikdy nep\u0159ijde. N\u011bkte\u0159\u00ed c\u00edt\u00ed, \u017ee nejsou pro n\u011b (a)nebo na n\u011b jednodu\u0161e ani nemaj\u00ed.<\/p>\n<p>Ztr\u00e1ta ml\u00e9\u010dn\u00fdch bar\u016f nebo j\u00eddelen tak nen\u00ed jen ztr\u00e1tou gastronomickou, nad kterou by se dalo m\u00e1vnout rukou, jedn\u00e1 se i o ztr\u00e1tu soci\u00e1ln\u00ed. P\u0159\u00edznak dne\u0161n\u00ed doby, kdy obecn\u011b ub\u00fdv\u00e1 m\u00edst, kde by se potk\u00e1vali lid\u00e9 nap\u0159\u00ed\u010d vrstvami. I p\u0159i j\u00eddle se tak st\u00e1le v\u00edc uzav\u00edr\u00e1me do sv\u00fdch bublin. A v\u0161ichni v\u00edme, kam takov\u00e9 uzav\u00edr\u00e1n\u00ed sp\u011bje\u2026 P\u0159itom by sta\u010dilo tak m\u00e1lo. Pro\u010d takov\u00fd ml\u00ed\u010d\u0148\u00e1k ru\u0161it, kdy\u017e by sta\u010dilo cht\u00edt po provozovatel\u00edch kvalitn\u011bj\u0161\u00ed nab\u00eddku \u2013 lep\u0161\u00ed suroviny, pest\u0159ej\u0161\u00ed v\u00fdb\u011br (nap\u0159\u00edklad bezmas\u00fdch j\u00eddel)\u2026 I \u201eoby\u010dejn\u00ed\u201c lid\u00e9 si za kvalitu r\u00e1di p\u0159iplat\u00ed, pokud jde o zdra\u017een\u00ed rozumn\u00e9 a ne o p\u0159edra\u017eov\u00e1n\u00ed v \u0159\u00e1du mnoha des\u00edtek korun. Pokud se i ta nejoby\u010dejn\u011bj\u0161\u00ed v\u011bc d\u011bl\u00e1 poctiv\u011b, m\u016f\u017eete na jednom m\u00edst\u011b skute\u010dn\u011b vid\u011bt d\u016fchodce, turisty, studenty i mana\u017eery z korpor\u00e1t\u016f, jak mi potvrdila ned\u00e1vn\u00e1 n\u00e1v\u0161t\u011bva tot\u00e1ln\u011b narvan\u00e9 j\u00eddelny Havelsk\u00e1 koruna nedaleko V\u00e1clav\u00e1ku.<\/p>\n<p>Aby bylo na z\u00e1v\u011br jasno, tohle nen\u00ed hejt na luxusn\u00ed restaurace, hip kav\u00e1rny nebo vegan bistra. Naopak, jsme r\u00e1di, \u017ee si tak\u0159ka kdykoliv m\u016f\u017eeme d\u00e1t pho, indickou sma\u017eenku nebo raw kol\u00e1\u010d. Ale cht\u011bli bychom, aby stejn\u011b dostupn\u00e1 z\u016fstala i oby\u010dejn\u00e1 lah\u016fdk\u00e1\u0159stv\u00ed. Abychom pro chleb\u00ed\u010dky nemuseli b\u011b\u017eet p\u0159es p\u016fl m\u011bsta a aby si je mohl dop\u0159\u00e1t \u00fapln\u011b ka\u017ed\u00fd. Pom\u011br trendy foodie ob\u010derstvoven a podnik\u016f, kter\u00e9 jsou cenov\u011b dostupn\u00e9 v\u0161em, by rozhodn\u011b m\u011bl b\u00fdt obr\u00e1cen\u00fd. Zat\u00edm se ale zd\u00e1, \u017ee ta \u201enorm\u00e1ln\u00ed\u201c pohostinstv\u00ed budou za chv\u00edli na seznamu ohro\u017een\u00fdch druh\u016f\u2026 Tak\u017ee koukejme do t\u011bch zbyl\u00fdch chodit, jinak p\u0159ijdeme o mo\u017enost d\u00e1t si tu nejv\u00edc sn\u00eddan\u00ed \u0161ampion\u016f \u2013 chleb\u00ed\u010dek, v\u011btrn\u00edk, turka a pivo!<\/p>\n<div id=\"fb-root\"><\/div>\n<p><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"http:\/\/www.vagus.cz\/?p=8689\" send=\"true\" font=\"\"><\/fb:like><\/p>\n","protected":false},"excerpt":{"rendered":"<p>To je ov\u0161em velmi smutn\u00e9!
